Recipe # 1 – Vegetable Stroganoff

Ingredients:

Stroganoff Sauce:

1 Cup of Cashews
1/2 Cup of Lemon Juice
1 Cup of Paparika
1 Cup of Water

1 Portobello or Other Mushroom (Portobello works best)
8 Small Mushrooms
2 Onions
1/4 Cup of Cheyene Pepper

The first step is to chop the mushrooms into extent-type of types. Cut the chestnut mushrooms quickly.To create the mushroom marinade: mix the water, zatar (or equivalent), miso, tamari, paprika, salt and crushed garlic.
Place the mushrooms inside a dish and mix nicely with the marinade sauce. Leave for any couple of hrs – this will enable the mushrooms to absorb the flavours and also soften them, so they taste “cooked”! In the event you choose your food “warm” (like me!) then let it marinade for those 2 or so hrs in the dehydrator – set to 105 F or about 41C.
Whilst the mushrooms are marinading, you could soak your cashews for an hour or two. Drain & rinse effectively.
Put the cashews into a high speed blender with all the lemon juice. You’ll probably need to add 3 or 4 tablespoons of water. Blitz to a smooth puree.
When you’re ready to eat, mix the cashew / lemon paste into the mushrooms. Garnish with chopped coriander leaves, when you happen to have any around. Add some ground black pepper, in case you like.
